Substitutions
3 teaspoons (tsp) = 1 tablespoon (tbsp)   1 square chocolate = 3 tbsp cocoa & 1 tbsp butter
4 tablespoons = 1/4 cup   1 tbsp cornstarch = 2 tbsp flour (for thickening)
5 1/3 tablespoons = 1/3 cup   1 cup buttermilk = 1 cup of yogurt
8 tablespoons = 1/2 cup   1 cup milk = 1/2 cup evaporated milk + 1/2 cup water
16 tablespoons = 1 cup or 8 ounces   1 cup milk = 2 tbsp of powdered milk + 8 oz water
1 cup (c) = 8 fluid ounces (oz.)   1 cup sour milk = 1 c milk + 1 tbsp lemon juice or vinegar
1 cup = 1/2 pint   1 cup pastry or cake flour = 1 c all purpose flour less 2 tbsp
2 cups = 1 pint   1 tsp baking powder = 1/4 tsp baking soda = 1/2 tsp cream of tartar
4 cups = 1 quart   1 cup sugar = 1 cup honey (use 1/4 cup less liquid in recipe)
4 quarts = 1 gallon   1 cup brown sugar = 1 cup granulated sugar
8 quarts - 1 peck   1 cup oil = 1/2 lb butter or margarine
4 pecks = 1 bushel   1 tbsp prepared mustard = 1 tsp dry mustard
    1 clove garlic = 1/8 tsp garlic powder
    Use equal amounts of applesauce or pureed pears to replace fats (for fat free recipes) Remember: using low/non-fat margarines increases fluid content when baking!

1 slice bread - 1/2 cup crumbs
14 graham cracker squares = 1 cup crumbs
18 chocolate wafers = 1 cup crumbs
22 vanilla wafers = 1 cup crumbs



Dairy

Cheese: 4 oz = 1 cup shredded
Cheese: 1 lb = 4 cup shredded

Butter: 1 stick = 1/2 cup
Butter: 4 sticks = 2 cups = 1 lb
 
Pasta and Rice
Macaroni: 1 cup uncooked = 2 1/2 cups cooked
Noodles: 1 cup uncooked = 1 cup cooked
Spaghetti: 8oz uncooked = 4 cups cooked
Rice: 1 cup uncooked = 3 cups cooked


Sugar
1 lb granulated sugar = 2 cups granulated sugar
1 lb brown sugar = 2 1/4 cups brown sugar, packed
1 lb confectioners sugar = 3 3/4 cups confectioners sugar


Herbs:
1 tsp dried = 1 Tbsp fresh
 

Popcorn
1/4 cup unpopped = 5 cups popped
  




Healthier Oil Choices:
Use Olive Oil, Safflower Oil, Flax Seed Oil, Sesame Oil, Canola Oil and even Peanut Oil over margarines. Butter is a healthier substitute than margarine.

Healthier Sweetener Choices:
Sugar, corn syrup, succrose are all considered artificial energy spikes. Try substituting some or all sugar ingredients with Stevia or Chrystalline Fructose. These are available at your local health food stores. Honey and even sugar substitutes such as Splenda, Equal or Sweet n Low are actually acceptable replacements. The chemicals found in Equal (Aspartame) and Sweet n Low (saccharine) are debatable as "healthier" substitutes. Of the artificial sweetners, Splenda does not cause a rise in blood sugar, which raises glucose and affects your insuline production.

FDA Artificial Sweeteners and Cancer Facts:
Artificial sweeteners are regulated by the U.S. Food and Drug Administration (FDA). The FDA says there is no evidence that the regulated artificial sweeteners on the market in the United States are related to cancer risk in humans. As new sweetening products come on the market, the FDA continues to investigate any possible short- or long-term health risks that these products might create.
