Morning Pizza

mushrooms shredded cheddar cheese sausage eggs - use one per person
green pepper shredded mozzerella cheese bacon salsa or spaghetti sauce
red pepper
baby carrots
potatoes
broccoli
string cheese
feta
ham
non-meat burger substitute
butter, olive oil or broth for sauteeing veggies & ingredients
zucchini
garlic

Basically, choose one or more ingredients from each column [above]. Your favorite veggies, favorite cheese(s) meat or non-meat ingredients and use a ratio of one egg per person. Saute on low heat for 5 minutes - your choice of ingredients in 1/2 - 1 tsp of oil, butter or broth - in a pan suitable for serving size.

Small omelet pan for personal pan pizzas - larger pan for multiple servings. Beat eggs until fluffy (with fork or wire wisp) and pour over sauteed ingredients. Sprinkle cheese on top of egg mixture and add four spoonfuls of salsa or spaghetti sauce to the top in balanced quarters. Place lid on skillet and cook covered for 5-7 minutes (small pan) or 10-12 minutes (large pan) at low heat. (suggested heat setting is between 1/4 and 1/2 way on your burner heat). Check after 7 minutes to see if egg has set on top. It will be visible through cheese. If additional cooking time is needed, tilting skillet will show egg is not firm. Larger amounts of eggs in larger pan will need a minimum of 10 minutes covered cooking time before checking.

Serve with toast, english muffins or fruit slices.

Egg Omelet

Egg Omelet

Ever wonder how the chefs manage to make a tender fluffy omelet? It's easy!

* Make omelets in small omelet sized skillet.
*
Spray pan with Pam or similar cooking spray.
*
Place pan on medium to medium high heat.
* The secret is high heat and fast cooking (setting should be between medium to medium high).
*
Beat 1-3 eggs (or to reduce cholesterol, 1 egg & 2 whites) and season egg with your preferences (salt, pepper, onion powder, garlic powder, seasoned non-salt, etc).
*
Pour entire beaten egg mixture into pan.
*
Rotate pan so that egg mixture coats high and cooks. As soon as egg mixture begins to cook on the top edge (nearly right away) take a heat resistant rubber spatula and start to rotate the spatula around the top edge - gently pulling the cooked egg away from the pan - getting just below the quick cooked egg - and tilt the pan so that the egg mixture runs under and replaces the pulled away egg. Essentially - you keep doing this until you no longer have fluid egg mixture available in the center - because it was forced out under the cooked portions - resulting in what appears as fluffy cooked egg layers. With a larger spatula, flip entire egg over and add cheese or other ingredients and rotate half of egg over onto itself - creating a filled omelet. Remove and serve immediately.
* This entire cooking process is less than 2 minutes! Never leave omelete unattended.
Fluffy omelets are not cooked long. Overcooked omelets are flat, tough and scorched.
